Lobsters belong to the Class Crustacea. Most live in water and use gills to breathe. They belong to the Homaridae family. The American lobster, Homarus americanus, can grow to as much as 24 inches in length and 28 pounds in weight. In life it is dark green, mottled with still darker spots, and yellowish underneath. When boiled, the only way most of us every see it, it turns brilliant red.

Lobsters have long bodies and their tails are muscular. You will find them living on the sea floor in crevices or burrows. They have five pairs of legs. Three of the pair have claws, including the first pair, which are usually much larger than the others. They are a favorite seafood and are very important economically.
